Ingredients:
6 large potatoes, peeled and boiled
1/2 pound of bacon
6 green onions, sliced
1 large yellow onion, diced
1 teaspoon of black pepper
2 teaspoons of salt
2 teaspoons of white wine mustard (optional)
1/3 cup of red wine vinegar
2 teaspoons of minced parsley
Cook the bacon on a medium heat till almost crispy. While cooking the bacon, slice the boiled potatoes in 1/8 inch slices. Once nearly crisp, reduce the heat and set aside the bacon.
In the same skillet used for the bacon, add the potatoes and onion (if the bacon doesn't leave enough drippings, add some vegetable oil). Stir gently over low heat.
Mix the red wine vinegar, mustard, salt and pepper. Add half to the skillet and stir. Dice you bacon into pieces and add back to the skillet.
Move from the skillet to a serving platter. Add the rest of the red wine mixture, stir lightly. Garnish with parsley and green onion, and serve.
